Vegan Mediterranean Pasta Dish
Ingredients
- 200g pasta
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 10 cherry tomatoes, halved
- 2 tablespoons tomato paste
- 1 can (400g) chickpeas, rinsed and drained
- 2 tablespoons black olives, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
Preparation
Cook the pasta in salted boiling water according to package directions until al dente
While the pasta is cooking, heat olive oil in a large skillet over medium heat
Add minced garlic and sauté for about 1 minute until fragrant
Add sliced red bell pepper and zucchini, and cook for 5-7 minutes until softened
Stir in halved cherry tomatoes, tomato paste, drained chickpeas, sliced black olives, dried oregano, and dried basil
Season with salt and pepper to taste, and cook for an additional 2-3 minutes to heat through
Drain the cooked pasta and add it to the skillet, tossing everything together to combine
Serve the dish immediately
