Vegan Pesto Pasta Bake

Ingredients

  • 250g wholewheat pasta
  • 1 zucchini
  • 1 broccoli
  • 200g mushrooms
  • garlic
  • chilli flakes
  • 1/2 cup peas
  • 1 pot vegan pesto
  • large handful vegan grated cheese
  • fresh basil

Preparation

  1. Cook 250g wholewheat pasta

  2. Chop 1 zucchini, 1 broccoli, and 200g mushrooms into smaller chunks

  3. Sauté the vegetables in garlic, chilli flakes, and a few tablespoons of pasta cooking water

  4. Add half a cup of peas and place a lid on the vegetables for 4 minutes

  5. Drain the pasta when it is al dente

  6. Add a pot of vegan pesto to the drained pasta and stir through

  7. Add half of the vegetables and mix through the pasta and pesto sauce

  8. Transfer the pasta and vegetable mix to an oven tray and spread out

  9. Top with the remaining vegetables, a large handful of vegan grated cheese, fresh basil, and a sprinkle of chilli flakes

  10. Place under the grill and cook for 5 minutes until crisp
