Easy Vegan Pasta with Lentils and Vegetables
Ingredients
- 1 onion, sliced
- 5 garlic cloves, finely chopped
- 1 tsp italian herbs
- 1 zucchini, thinly sliced
- 2 large handfuls of cherry tomatoes, halved
- 400g tin lentils, drained + rinsed
- 250g (ish) GF penne
- 1 tsp tamari
- 2 - 3 tblsp herby pesto
- Cracked pepper
- Optional: Chilli flakes, vegan parmesan, or nutritional yeast
Preparation
Fry up the onion, garlic and herbs until just softened. Add zucchini and cook until soft. Stir through the tomatoes and allow all flavours to meld together.
Meanwhile, cook pasta according to packet directions. Drain, rinse and set aside.
Throw in the lentils, and season with pepper. Add a splash of tamari, stir, then add the pesto and combine well. Stir the pasta through the veggies and pesto.
Serve! Add any optional extras like parmesan, or chilli flakes, so on
