Creamy Avocado Pasta with Zucchini and Basil

Ingredients

  • 1 ripe avocado
  • 2 minced garlic cloves
  • 1/2 cup fresh basil
  • juice from 1 lemon
  • handful raw spinach
  • 2 tbsp evoo or sub veggie broth until nice consistency
  • salt and pepper to taste
  • 1 zucchini, thinly sliced
  • 1 box / 8 oz chickpea pasta or pasta of choice

Preparation

  1. Cook pasta, drain and set aside.

  2. Meanwhile, heat a non-stick skillet over medium-high heat.

  3. Add chopped zucchini with some salt and pepper and cook until browned (a dash of oil is optional).

  4. In a food processor, combine avocado, garlic, basil, lemon juice, spinach and evoo. Process until smooth.

  5. Toss on pasta and add zucchini on top.

  6. Enjoy.
