Vegan Spaghetti Bolognese

Ingredients

  • 2 cups diced tomato
  • 1/4 cup diced onions
  • 1/4 cup diced carrots
  • 1/4 cup diced celery
  • 2 garlic cloves crushed
  • 2 cups mushrooms diced finally
  • 3 tablespoons dried italian herbs
  • 1 tablespoon olive oil
  • 1 cup reserved pasta boiling water
  • 2 portions of pasta
  • salt and pepper
  • crushed chili flakes ( not necessary)
  • grated parmesan cheese for garnish

Preparation

  1. Boil the pasta in salted water and keep 1 cup of the water for the sauce

  2. Then drain

  3. Heat the oil and sauté the onions with the carrots

  4. Add the mushrooms and stir until the water is completely evaporated

  5. Season with salt and pepper and add the tomatoes, garlic and herbs and stir on high heat

  6. Once boiling lower heat to simmer and cook until tomatoes have thickened

  7. Add the pasta water according to desirable consistency and simmer for 3 minutes

  8. Mix in the pasta and fold with the sauce

  9. Serve with parmesan and chill flakes as per your taste and enjoy
