Zucchini and Peppers Pasta

Ingredients

  • 1 tsp avocado oil
  • 10 oz. plant-based ground or chopped cremini mushrooms
  • 1/2 to 3/4 tsp kosher salt, to taste
  • 1/4 tsp black pepper
  • 1/2 red, orange or yellow bell pepper, diced
  • 1 medium zucchini, sliced
  • 1 cup crushed tomatoes
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 to 2 tbsp olive oil, to taste
  • 1 package Palmini Angel Hair
  • 2 tbsp dairy-free parmesan for serving, optional

Preparation

  1. Preheat a large pan on medium heat.

  2. Add the avocado oil and crumble the grounds into pan. Stir and cook for 3 to 4 minutes.

  3. Add salt, black pepper, and diced peppers. Stir and cook for 3 to 4 minutes.

  4. Add sliced zucchini and cook for another 3 to 4 minutes, stirring halfway, until zucchini is nearly fork tender.

  5. Add crushed tomatoes, onion powder, garlic powder, olive oil, and stir. Cook at a gentle simmer for 2 to 3 minutes.

  6. Drain and rinse Palmini, squeezing out excess water.

  7. Top angel hair with sauce mixture and add parmesan to serve, if using.
