Zucchini and Peppers Pasta
Ingredients
- 1 tsp avocado oil
- 10 oz. plant-based ground or chopped cremini mushrooms
- 1/2 to 3/4 tsp kosher salt, to taste
- 1/4 tsp black pepper
- 1/2 red, orange or yellow bell pepper, diced
- 1 medium zucchini, sliced
- 1 cup crushed tomatoes
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 to 2 tbsp olive oil, to taste
- 1 package Palmini Angel Hair
- 2 tbsp dairy-free parmesan for serving, optional
Preparation
Preheat a large pan on medium heat.
Add the avocado oil and crumble the grounds into pan. Stir and cook for 3 to 4 minutes.
Add salt, black pepper, and diced peppers. Stir and cook for 3 to 4 minutes.
Add sliced zucchini and cook for another 3 to 4 minutes, stirring halfway, until zucchini is nearly fork tender.
Add crushed tomatoes, onion powder, garlic powder, olive oil, and stir. Cook at a gentle simmer for 2 to 3 minutes.
Drain and rinse Palmini, squeezing out excess water.
Top angel hair with sauce mixture and add parmesan to serve, if using.
