Easy Vegan Brownie Cheesecake Dessert

Ingredients

Brownie layer

  • 2 flax eggs (2 tbsp flax meal mixed with 5 tbsp water)
  • 1 cup oat flour (any flour will work)
  • 1/2 cup coconut oil (melted)
  • 1/2 cup coconut sugar (or more if you prefer)
  • 1 tsp vanilla extract
  • 1/2 cup carob powder (or cocoa)
  • 1 tsp baking powder

Cheesecake layer

  • 1 cup soaked cashews
  • 1 block tofu
  • 1/3 cup coconut cream
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • Juice from 1 lemon
  • Sweetener of choice

Preparation

  1. Mix together the wet ingredients and then add in the dry ones for the brownie layer. Mix again. Pour about half of the batter into a baking dish.

  2. Blend all the ingredients for the cheesecake layer.

  3. Pour the cheesecake batter on the brownie layer.

  4. Add the rest of the brownie batter on top.

  5. Bake at 350F for about 30-40 minutes.

  6. Let it cool before serving. Enjoy!
