Decadent Pistachio Cake

Ingredients

  • 1) 1 1/4 cups of plant based milk with 1 t of apple cider vinegar
  • 2) 1/2 of coconut oil, melted
  • 3) 2 flax eggs (2 t of flax meal in 5 t of water, leave for a few minutes to thicken up)
  • 4) 1 tsp of vanilla powder
  • 5) 2 cups white flour
  • 6) 3 t of ground pistachios
  • 7) 1/2 cup of spelt flour
  • 8) 1/2 cup of coconut sugar
  • 9) 1 cup of regular sugar or coconut sugar
  • 10) 2.5 tsp of baking powder
  • 11) 1/2 teaspoon (2.5 ml) salt

Preparation

  1. Preheat the oven to 350f

  2. Grease two 8 inch round spring foam pans

  3. Set aside

  4. Stir the wet ingredients, incl flax eggs together in a medium bowl

  5. In a food processor, combine the dry ingredients and whir to combine

  6. Add the wet ingredients and whir again to mix

  7. The mixture should be thick but flow

  8. Not gloopy but not runny either

  9. Separate batter into your prepared pans and bake for for 30 minutes or until centre is set and cooked

  10. The cake is so moist and soft!
