Healthy Chocolate Zucchini Cake
Ingredients
- 2 cups spelt flour
- 2 tsp baking powder
- 1/4 tsp pink salt
- 1/2 cup cacao powder
- 1 tbsp chia seeds + 3 tbsp water
- 3/4 cup raw cane sugar
- 1 medium zucchini, shredded
- 1/2 cup coconut oil, melted
- 1/2 cup unsweetened plant milk
- 1 tsp vanilla
Preparation
Preheat oven to 180°C
In a large bowl, mix together the dry ingredients: spelt flour, baking powder, pink salt, and cacao powder
Prepare the chia egg by combining chia seeds with water and letting it sit for 5 minutes to gel
In another bowl, mix the wet ingredients: chia egg, raw cane sugar, shredded zucchini, melted coconut oil, unsweetened plant milk, and vanilla
Add the wet mixture to the dry ingredients and stir until just combined, being careful not to overmix
Pour the batter into a greased baking pan
Bake for 30-40 minutes or until a toothpick inserted comes out clean
Remove from oven and allow the cake to cool completely before serving
