Pumkin Pie Blondies with Espresso and Dark Chocolate Chips
Ingredients
- 1 cup of pumpkin puree
- 1 cup of turbinado sugar
- 1/3 cup coconut oil
- 1/4 cup of almond milk
- 1/8 cup of espresso
- 1 tsp of vanilla extract
- 1 1\4 cup of all purpose flour
- 1 tsp of pumpkin spice
- 1/2 tsp of baking powder
- 1/2 tsp of baking soda
- 1/8 tsp of pink salt
- 1/2 cup of dark chocolate chips
Preparation
Combine the first six ingredients into a blender and blend until smooth
Combine the remaining ingredients (excluding chocolate chips) into a bowl and stir all ingredients
Preheat oven to 350° F. Combine wet to dry ingredients and add chocolate chips. Pour batter into a cast iron pan and bake for 30 minutes
Once time is up remove from oven and garnish with pumpkin seeds and chocolate drizzle. Serve and enjoy
