Pumkin Pie Blondies with Espresso and Dark Chocolate Chips

Ingredients

  • 1 cup of pumpkin puree
  • 1 cup of turbinado sugar
  • 1/3 cup coconut oil
  • 1/4 cup of almond milk
  • 1/8 cup of espresso
  • 1 tsp of vanilla extract
  • 1 1\4 cup of all purpose flour
  • 1 tsp of pumpkin spice
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/8 tsp of pink salt
  • 1/2 cup of dark chocolate chips

Preparation

  1. Combine the first six ingredients into a blender and blend until smooth

  2. Combine the remaining ingredients (excluding chocolate chips) into a bowl and stir all ingredients

  3. Preheat oven to 350° F. Combine wet to dry ingredients and add chocolate chips. Pour batter into a cast iron pan and bake for 30 minutes

  4. Once time is up remove from oven and garnish with pumpkin seeds and chocolate drizzle. Serve and enjoy
