Coconut and Goji Cookies
Ingredients
- 300g flour
- 140g coconut oil, melted
- 100ml coconut nectar
- 100ml oat milk
- 45g goji berries
- 40g coconut chips
- 1 tbsp chia seeds
- 2 tsp vanilla extract
- 3/4 tsp baking powder
- 1/2 tsp salt
Preparation
Mix the flour, salt, baking powder, chia seeds, coconut chips and goji berries in a bowl.
Make a well in the middle and add the melted oil, nectar, milk and vanilla.
Mix until smooth.
Scoop out heaped tablespoons of the mixture, roll into a ball, place on a lined baking tray and flatten to a chunky disk shape.
Bake at 180C for 14 minutes.
Leave to cool on a wire rack then dip in melted chocolate and sprinkle with extra coconut and gojis.
