Coconut and Goji Cookies

Ingredients

  • 300g flour
  • 140g coconut oil, melted
  • 100ml coconut nectar
  • 100ml oat milk
  • 45g goji berries
  • 40g coconut chips
  • 1 tbsp chia seeds
  • 2 tsp vanilla extract
  • 3/4 tsp baking powder
  • 1/2 tsp salt

Preparation

  1. Mix the flour, salt, baking powder, chia seeds, coconut chips and goji berries in a bowl

  2. Make a well in the middle and add the melted oil, nectar, milk and vanilla

  3. Mix until smooth

  4. Scoop out heaped tablespoons of the mixture, roll into a ball, place on a lined baking tray and flatten to a chunky disk shape

  5. Bake at 180C for 14 minutes

  6. Leave to cool on a wire rack then dip in melted chocolate and sprinkle with extra coconut and gojis

  7. Enjoy
