Double Chocolate Almond Butter Cookies

Ingredients

Dry mix

  • 1 cup flour (spelt, all-purpose, or oat)
  • 6 tablespoons cacao powder
  • 6 tablespoons coconut sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Wet mix

  • 1/4 cup coconut oil (melted)
  • 3 tablespoons almond milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Filling

  • Almond butter (as needed)

Optional add-ins

  • Vegan mini chocolate chips (as desired)
  • 1/2 chocolate bar, chopped

Preparation

  1. Mix the wet ingredients in a bowl first.

  2. Add the dry ingredients to the wet ingredients bowl.

  3. Optionally, stir in mini vegan chocolate chips, chill the dough in the fridge for 5-10 minutes, chop half of a chocolate bar, and mix it into the dough.

  4. Roll the dough into balls, add a blob of almond butter in the center, place a few extra chocolate chips on top, and place them on parchment paper for baking.

  5. Bake at 325 degrees for 10 minutes.

  6. Cool for 10 minutes then enjoy.
