Blueberry Lemon Donuts

Ingredients

  • 1 cup flour
  • 1 cup almond milk (unsweetened)
  • 1/2 cup wild blueberries
  • 1/4 cup coconut sugar
  • 1 mashed banana
  • 2 tbs lemon juice
  • 1 tbs vanilla extract
  • zest of 1 lemon
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • dash of salt
  • 1/4 cup powdered sugar
  • 1 tsp milk
  • 1 tsp lemon zest
  • 1/4 tsp lemon
  • drop of vanilla extract

Preparation

  1. Preheat your oven to 350ºF

  2. Sift all the dry ingredients together

  3. In a separate bowl, mix the almond milk, mashed banana, lemon juice, vanilla extract, and zest together

  4. Pour into dry ingredients and mix well but don't over mix

  5. Fold in your blueberries and pipe the batter into a lightly greased donut pan

  6. Bake for 11-12 minutes while you prepare the glaze

  7. Mix all the ingredients for the glaze together. You may need to add more liquid to the icing but only add 1/2 tsp of milk at a time to prevent your icing from being too thin

  8. Allow your donuts to cool completely before icing and enjoy
