Healthy Vegan Donuts in 20 Minutes

Ingredients

  • 1 cup of flour
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • pinch of salt
  • 1/2 teaspoon of cinnamon
  • 1/4 cup of maple syrup
  • 1/2 cup + 2 tablespoons of almond milk
  • 3 tablespoons of nut butter
  • 1 teaspoon of vanilla extract
  • 1 medium banana
  • 2 tablespoons of cocoa powder

Frosting

  • 2 tablespoons of dark chocolate
  • 1 teaspoon of coconut oil
  • 1/2 cup of powdered sugar
  • 1 tablespoon of plant based milk

Preparation

  1. Pre-heat oven to 350 degrees F. Grease a 6 cavity donut pan or prepare for muffins with possible extra baking time.

  2. In a large bowl, mash the banana until few lumps remain.

  3. Stir in the almond milk, nut butter, maple syrup, and vanilla extract until well combined.

  4. Sift the flour, baking soda, baking powder, salt, cocoa powder, and cinnamon over the wet ingredients and mix to combine.

  5. Spoon or pipe the mixture evenly into the donut pan cavities.

  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean. Let cool slightly and transfer to a wire rack to cool more.

  7. Melt the dark chocolate and coconut oil in a small bowl until just melted.

  8. Whisk in the powdered sugar and plant-based milk, adding more milk if needed to achieve desired thickness.

  9. Dip each cooled donut into the frosting and add sprinkles as desired. Enjoy!
