Vegan Cauliflower Brownies with Chocolate

Ingredients

  • 170 g flour
  • 220 g cauliflower
  • 50 ml coconut oil
  • 25 g cocoa powder
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 180 ml almond milk
  • 200 g brown erythritol (alternatively xylitol or coconut sugar)
  • 80 g dark chocolate

Preparation

  1. Cook and puree the cauliflower.

  2. In a bowl, mix all the liquid ingredients (cauliflower, vanilla extract, coconut oil, almond milk, melted chocolate).

  3. In another bowl, mix all the dry ingredients (flour, cocoa powder, salt, baking powder & erythritol).

  4. Now work the dry ingredients into the liquid mixture until a homogeneous dough is formed.

  5. Fill into a baking pan and bake for 25 minutes at 180 degrees.
