Vegan Choc-Chip Banana Bread Muffins
Ingredients
- • 2 spotty ripe bananas
- • 2T almond milk (any plant milk works)
- • 2tsp vanilla extract
- • 2tsp ACV (apple cider vinegar)
- • 3T coconut oil (melted)
- • 1c spelt flour
- • 1/2tsp baking soda
- • 1/2tsp baking powder
- • 1/3c coconut sugar
- • 1/2c #vegan chocolate chips
Preparation
Mash the bananas, then mix together the wet ingredients first (top 5)
Mix dry ingredients in a different bowl, then stir in the wet ingredients to the dry ingredient bowl
Stir in 2/3 of the chocolate chips with the batter, and save the other half to add on top
Spray a muffin tins and add the mix
Bake @ 350° for 18-20min
