Vegan Choc-Chip Banana Bread Muffins

Ingredients

  • • 2 spotty ripe bananas
  • • 2T almond milk (any plant milk works)
  • • 2tsp vanilla extract
  • • 2tsp ACV (apple cider vinegar)
  • • 3T coconut oil (melted)
  • • 1c spelt flour
  • • 1/2tsp baking soda
  • • 1/2tsp baking powder
  • • 1/3c coconut sugar
  • • 1/2c #vegan chocolate chips

Preparation

  1. Mash the bananas, then mix together the wet ingredients first (top 5)

  2. Mix dry ingredients in a different bowl, then stir in the wet ingredients to the dry ingredient bowl

  3. Stir in 2/3 of the chocolate chips with the batter, and save the other half to add on top

  4. Spray a muffin tins and add the mix

  5. Bake @ 350° for 18-20min
