Vegan Gluten-Free Chocolate Bar Cookies
Ingredients
- 1 cup gluten free flour blend containing xanthan gum
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 chia egg
- 3 Tbsp coconut sugar
- 1/4 cup maple syrup or coconut nectar
- 1 tsp vanilla extract or powder
- 1/4 cup neutral flavored oil
- 1 dairy free dark chocolate bar
Preparation
Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper.
Make chia egg replacer by mixing 1 tsp ground chia seeds with 2 tsp warm water in a small bowl and set aside.
If making these grain free with quinoa or amaranth flour or a blend, make an extra chia egg to help bind the cookie dough.
Combine all dry ingredients in a large bowl.
Combine wet ingredients in a medium bowl and then add to dry ingredients along with chia egg or eggs.
Mix until just combined and stir in chocolate chips.
Scoop by rounded tablespoons onto prepared cookie sheets, leaving space for them to spread a bit.
Bake for 10-12 minutes until bottoms are just beginning to brown.
Cool on cookie sheet and enjoy warm.
