Almond Butter Carrot Blondies

Ingredients

  • 2/3 cup creamy almond butter
  • 1 chia egg (1 tablespoon chia seeds + 3 tablespoons water)
  • 1 cup grated carrot
  • 1/4 cup maple syrup
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup vegan dark chocolate chips

Preparation

  1. Mix together the chia egg in a bowl and let it sit for 5 minutes to thicken and gel.

  2. Once the egg mixture has set, add in the other ingredients except the carrot and chocolate, and stir until you get a smooth combined batter.

  3. Add in the grated carrot.

  4. Fold in your chocolate chips; use 1/4 cup mixed in the batter and save the other 1/4 cup for on top.

  5. Spread the batter in an 8x8 pan, then add the extra chocolate chips and more carrot shavings on top.

  6. Bake for 25 minutes at 350°F and cool down for about 1 hour before cutting into them.
