Almond Butter Carrot Blondies
Ingredients
- 2/3 cup creamy almond butter
- 1 chia egg (1 tablespoon chia seeds + 3 tablespoons water)
- 1 cup grated carrot
- 1/4 cup maple syrup
- 1 tablespoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/2 cup vegan dark chocolate chips
Preparation
Mix together the chia egg in a bowl and let it sit for 5 minutes to thicken and gel.
Once the egg mixture has set, add in the other ingredients except the carrot and chocolate, and stir until you get a smooth combined batter.
Add in the grated carrot.
Fold in your chocolate chips; use 1/4 cup mixed in the batter and save the other 1/4 cup for on top.
Spread the batter in an 8x8 pan, then add the extra chocolate chips and more carrot shavings on top.
Bake for 25 minutes at 350°F and cool down for about 1 hour before cutting into them.
