Carrot Cake Cinnamon Donuts

Ingredients

  • 3 flax eggs (3 tbsp flax meal + 4 tbsp water)
  • 1/4 cup coconut oil
  • 2 tbsp creamy almond butter
  • 1/4 cup coconut sugar
  • 2/3 cup almond flour
  • 1/3 cup buckwheat flour
  • 1 scoop protein powder (optional)
  • 1/3 cup grated carrot
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • baking powder
  • sea salt

Maple coconut glaze

  • 3 tbsp coconut butter
  • 1/2 tbsp maple syrup

Preparation

  1. Mix all wet ingredients.

  2. Add grated carrot and mix well.

  3. Add dry ingredients and mix well until a thick, sticky dough forms.

  4. Spoon the mixture into a lightly oiled donut pan.

  5. Sprinkle with more sea salt.

  6. Bake at 350 degrees Fahrenheit for 15 minutes or until cooked through.

  7. Meanwhile, heat coconut butter in a small saucepan on low heat, stirring constantly until melted.

  8. Add maple syrup and stir to combine.

  9. Once the donuts are done, let them sit for a few minutes to firm up.

  10. Drizzle the glaze over the donuts.

  11. Optionally, add chopped vanilla bean cashews.
