Carrot Cake Cinnamon Donuts
Ingredients
- 3 flax eggs (3 tbsp flax meal + 4 tbsp water)
- 1/4 cup coconut oil
- 2 tbsp creamy almond butter
- 1/4 cup coconut sugar
- 2/3 cup almond flour
- 1/3 cup buckwheat flour
- 1 scoop protein powder (optional)
- 1/3 cup grated carrot
- 1 tsp cinnamon
- 1 tsp ground ginger
- baking powder
- sea salt
Maple coconut glaze
- 3 tbsp coconut butter
- 1/2 tbsp maple syrup
Preparation
Mix all wet ingredients.
Add grated carrot and mix well.
Add dry ingredients and mix well until a thick, sticky dough forms.
Spoon the mixture into a lightly oiled donut pan.
Sprinkle with more sea salt.
Bake at 350 degrees Fahrenheit for 15 minutes or until cooked through.
Meanwhile, heat coconut butter in a small saucepan on low heat, stirring constantly until melted.
Add maple syrup and stir to combine.
Once the donuts are done, let them sit for a few minutes to firm up.
Drizzle the glaze over the donuts.
Optionally, add chopped vanilla bean cashews.
