Red Velvet Vegan Brownies

Ingredients

  • 1 1/2c raw diced beets .
  • 1 can chickpeas (de-shelled)
  • 2c rolled oats.
  • 1/4c maple syrup.
  • 1/4c coconut sugar .
  • 1/4c almond milk .
  • 1/4c creamy almond butter .
  • 1t vanilla extract .
  • 1/2tsp baking soda .
  • 1/4tsp sea salt .

Preparation

  1. Instructions: (makes 16 brownies)

  2. Add your beet to the food processor first and blend until smooth

  3. Place the rest of the ingredients in the processor (minus the chocolate chips) to create your batter

  4. Spread batter in an 8x8 pan then add the chocolate chips on top

  5. Bake for 25min @ 350°f (*cool down ~1hr before cutting into them)
