Levander Vegan Brownies

Ingredients

  • 2 medium purple potatoes (20oz)
  • 1/2 cup very strong lavender tea
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 3/4 cup buckwheat flour
  • 3/4 cup walnuts plus for topping
  • 1/4 cup raw cacao powder
  • Pinch of sea salt

Preparation

  1. Steam or bake the purple potatoes until they are very soft

  2. Place the purple potatoes with tea, maple and coconut sugar in a food processor and blend until smooth and creamy

  3. Put the remaining ingredients into a bowl and mix with the potato mixture until well combined

  4. Place the brownies onto a parchment paper-lined baking dish and bake at 350F for about 20-30 min

  5. Allow it to cool before spreading the lavender ganache on top and sprinkle some dry lavender pieces on top

  6. For the lavender ganache: 1/2 cup melted dark chocolate, 2 t coconut oil, 1/4 cup very strong lavender tea

  7. Tip: The tea needs to be very hot when adding to the melted chocolate and needs to be spread on top of the brownies quickly before it cools down.)
