Levander Vegan Brownies
Ingredients
- 2 medium purple potatoes (20oz)
- 1/2 cup very strong lavender tea
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 3/4 cup buckwheat flour
- 3/4 cup walnuts plus for topping
- 1/4 cup raw cacao powder
- Pinch of sea salt
Preparation
Steam or bake the purple potatoes until they are very soft
Place the purple potatoes with tea, maple and coconut sugar in a food processor and blend until smooth and creamy
Put the remaining ingredients into a bowl and mix with the potato mixture until well combined
Place the brownies onto a parchment paper-lined baking dish and bake at 350F for about 20-30 min
Allow it to cool before spreading the lavender ganache on top and sprinkle some dry lavender pieces on top
For the lavender ganache: 1/2 cup melted dark chocolate, 2 t coconut oil, 1/4 cup very strong lavender tea
Tip: The tea needs to be very hot when adding to the melted chocolate and needs to be spread on top of the brownies quickly before it cools down.)
