Vegan Gluten-Free Molasses Ginger Cookies
Ingredients
- 1 cup all purpose gluten free flour (Bob’s Red Mill 1 to 1)
- 1 cup oat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon pumpkin spice
- 1/4 teaspoon salt
- 1/4 cup solidified coconut oil
- 1/2 cup maple syrup or coconut sugar
- 3 tablespoons blackstrap molasses
- 1 tablespoon vanilla extract
- 2 tablespoons nut milk
Preparation
Combine all ingredients.
Make small cookie balls and place them on parchment paper.
Bake at 350 degrees for 10 to 15 minutes.
