Vegan Gluten-Free Molasses Ginger Cookies

Ingredients

  • 1 cup all purpose gluten free flour (Bob’s Red Mill 1 to 1)
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon pumpkin spice
  • 1/4 teaspoon salt
  • 1/4 cup solidified coconut oil
  • 1/2 cup maple syrup or coconut sugar
  • 3 tablespoons blackstrap molasses
  • 1 tablespoon vanilla extract
  • 2 tablespoons nut milk

Preparation

  1. Combine all ingredients.

  2. Make small cookie balls and place them on parchment paper.

  3. Bake at 350 degrees for 10 to 15 minutes.
