Vegan Gluten-Free Linzer Cookies

Ingredients

  • 1 cup plain GF flour
  • 1/2 cup almond flour @bobsredmill
  • 1 tsp baking powder
  • 4 tbsp coconut sugar @bobsredmill
  • 1/4 tsp salt
  • 2 tbsp maple syrup
  • 5-6 tbsp coconut oil, melted
  • 3 tbsp almond milk @koitafoods
  • 1/2 tsp vanilla extract

Preparation

  1. Preheat your oven to 180°C and line a baking sheet with parchment paper.

  2. Mix the dry ingredients in a mixing bowl before adding the wet ingredients.

  3. Whisk the batter until it reaches a dough-like consistency.

  4. Dust some flour on the countertop before rolling out the cookie dough.

  5. Use a cookie cutter to cut your Valentine cookies. Then assemble them on the lined baking sheet.

  6. Bake in the oven for 10-12 minutes.

  7. Set aside to cool.

  8. Fill in the chia-raspberry jam into the center of each cookie.
