Vegan Gluten-Free Linzer Cookies
Ingredients
- 1 cup plain GF flour
- 1/2 cup almond flour @bobsredmill
- 1 tsp baking powder
- 4 tbsp coconut sugar @bobsredmill
- 1/4 tsp salt
- 2 tbsp maple syrup
- 5-6 tbsp coconut oil, melted
- 3 tbsp almond milk @koitafoods
- 1/2 tsp vanilla extract
Preparation
Preheat your oven to 180°C and line a baking sheet with parchment paper.
Mix the dry ingredients in a mixing bowl before adding the wet ingredients.
Whisk the batter until it reaches a dough-like consistency.
Dust some flour on the countertop before rolling out the cookie dough.
Use a cookie cutter to cut your Valentine cookies. Then assemble them on the lined baking sheet.
Bake in the oven for 10-12 minutes.
Set aside to cool.
Fill in the chia-raspberry jam into the center of each cookie.
