Pecan Thumbprint Cookies with Date Caramel
Ingredients
- 1 3/4 cup pecan flour
- 1 egg
- 3 tbsp maple syrup
- 2 tbsp coconut oil, melted
- 1 tsp baking powder
- pinch of salt
Date caramel
- 10 pitted medjool dates
- 1 tbsp water
Preparation
Mix all cookie ingredients to form dough
Chill the dough in the fridge for about 30 minutes to firm up
Bake at 350°F for 10 minutes
Press holes in the cookies immediately after they come out of the oven and top with date caramel and pecans
Date caramel
Blend 10 pitted medjool dates with 1 tbsp water
