Soft Flaky Matcha Tahini Cookies with Sesame
Ingredients
- 1 egg
- 1 cup almond flour
- 1/3 cup + 1tbsp tahini
- 1/3 cup maple syrup
- 2 tsp matcha powder
- 1/2 tsp baking powder
- 1/2 tsp bi-carb soda
- a pinch of salt
- black and white sesame seeds
Preparation
Preheat oven to 170°
Combine all ingredients together (except the sesame seeds) and chill batter in refrigerator for 30 min
Wet hands to avoid batter sticking to your palms and form balls with the batter. Place them individually on parchment paper lined tray and ensure they aren't too close (they will spread out). Then press them down to flatten them and scatter some sesame seeds on top
Cook them for approx 10 min or until just cooked, if you overcook, they lose their green hue and turn brown
These turned out soft, flaky and absolutely delicious! Definitely give these a go
