Matcha Oat Almond Muffins

Ingredients

  • 1/2 cup rolled oats
  • 2 tbsp almond flour (optional but recommended)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 tsp matcha powder (@myencha is my fave)
  • 1 tbsp maple syrup
  • 6-7 tbsp plant milk

Preparation

  1. Preheat the oven to 350°F (175°C).

  2. Blend the rolled oats into a fine flour using a blender or food processor.

  3. In a mixing bowl, combine the oat flour, almond flour (if using), baking powder, salt, and matcha powder.

  4. Add the maple syrup and plant milk to the dry ingredients, and stir well to combine into a smooth batter.

  5. Pour the batter into a small baking dish, spreading it evenly.

  6. Place the baking dish in the preheated oven and bake for approximately 25 minutes, or until a toothpick inserted into the center comes out clean.

  7. Once baked, remove the dish from the oven and let the muffins cool slightly before serving.
