Cobbler with a Cornmeal Almond Oat

Ingredients

  • ripe chopped peaches
  • 2/3 cup strawberry JAM
  • almond flour
  • rolled oats
  • corn meal
  • 1 teaspoon baking powder
  • pinch of salt
  • butter or coconut oil
  • 1/2 cup maple syrup
  • 1 teaspoon almond extract

Preparation

  1. Preheat oven to 375 degrees F and grab an 8X8 baking dish

  2. To the baking dish, add 5 medium ripe chopped peaches and 2/3 cup strawberry JAM! I used a homemade one but anything a little chunky will work

  3. Stir to combine

  4. In a mixing bowl, whisk together 1/2 cup each blanched almond flour, rolled oats and corn meal, 1 teaspoon baking powder and a pinch of salt

  5. Add 5 tablespoons melted butter or coconut oil, 1/2 cup maple syrup and 1 teaspoon almond extract

  6. Stir to evenly incorporate

  7. Dollop the cornmeal topping over the fruit, then bake for 35 mins or until golden brown on top
