Cobbler with a Cornmeal Almond Oat
Ingredients
- ripe chopped peaches
- 2/3 cup strawberry JAM
- almond flour
- rolled oats
- corn meal
- 1 teaspoon baking powder
- pinch of salt
- butter or coconut oil
- 1/2 cup maple syrup
- 1 teaspoon almond extract
Preparation
Preheat oven to 375 degrees F and grab an 8X8 baking dish
To the baking dish, add 5 medium ripe chopped peaches and 2/3 cup strawberry JAM! I used a homemade one but anything a little chunky will work
Stir to combine
In a mixing bowl, whisk together 1/2 cup each blanched almond flour, rolled oats and corn meal, 1 teaspoon baking powder and a pinch of salt
Add 5 tablespoons melted butter or coconut oil, 1/2 cup maple syrup and 1 teaspoon almond extract
Stir to evenly incorporate
Dollop the cornmeal topping over the fruit, then bake for 35 mins or until golden brown on top
