Vegan Chocolate Bar Cookies

Ingredients

  • 1 cup flour, or gluten free flour blend containing xanthan gum, or 3/4 cup quinoa flour for a paleo and/or grain-free option
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 chia egg
  • 3 tablespoons coconut sugar
  • 1/4 cup maple syrup or coconut nectar
  • 1 teaspoon vanilla extract or powder
  • 1/4 cup neutral flavored oil
  • 1 dairy free dark chocolate bar

Preparation

  1. Preheat oven to 350 degrees

  2. Line a cookie sheet with parchment paper

  3. Make chia egg replacer by mixing 1 teaspoon ground chia seeds with 2 teaspoons warm water in a small bowl and set aside

  4. If you are making these grain free with quinoa or amaranth flour, or a blend of both, then make an extra chia egg to help bind the cookie dough

  5. Combine all dry ingredients in a large bowl

  6. Combine wet ingredients in a medium bowl and then add to dry ingredients along with chia egg or eggs

  7. Mix until just combined and stir in chocolate chips

  8. Scoop by rounded tablespoons onto prepared cookie sheets, leaving space for them to spread a bit

  9. Bake for 10-12 minutes until bottoms are just beginning to brown

  10. Cool on cookie sheet and enjoy warm
