Gut-Friendly Paleo Vegan Double Chocolate Cookies
Ingredients
- 1/2 cup coconut sugar
- 2 tbsp maple syrup
- 1/2 cup unsweetened, plain vegan yogurt (runny, such as @foragerproject)
- 2 tbsp melted coconut oil
- 1 tsp vanilla
- 1 flax egg (1 tbsp flax seed meal + 2 tbsp water)
- 2 tbsp almond milk
- 1 1/2 cup coconut flour
- 1/3 cup cocoa powder
- 1 tsp baking soda
- 1/3 cup dark chocolate chunks (omit to be completely refined sugar-free or swap for alternately sweetened choc)
Preparation
Preheat the oven to 350 degrees.
Line a baking sheet with a silicone baking mat or parchment paper.
In a large bowl, whisk together all wet ingredients (through flax egg).
Add in flour, cocoa powder, and baking soda. Stir until a soft dough forms.
Fold in chocolate chunks.
Using a cookie scoop, scoop dough onto the baking sheet. Slightly press down with the palm of your hand.
Optional: Stick a chocolate chunk in the middle.
Bake for 15 minutes.
Let cool for 5 minutes before digging in.
