Gut-Friendly Paleo Vegan Double Chocolate Cookies

Ingredients

  • 1/2 cup coconut sugar
  • 2 tbsp maple syrup
  • 1/2 cup unsweetened, plain vegan yogurt (runny, such as @foragerproject)
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla
  • 1 flax egg (1 tbsp flax seed meal + 2 tbsp water)
  • 2 tbsp almond milk
  • 1 1/2 cup coconut flour
  • 1/3 cup cocoa powder
  • 1 tsp baking soda
  • 1/3 cup dark chocolate chunks (omit to be completely refined sugar-free or swap for alternately sweetened choc)

Preparation

  1. Preheat the oven to 350 degrees.

  2. Line a baking sheet with a silicone baking mat or parchment paper.

  3. In a large bowl, whisk together all wet ingredients (through flax egg).

  4. Add in flour, cocoa powder, and baking soda. Stir until a soft dough forms.

  5. Fold in chocolate chunks.

  6. Using a cookie scoop, scoop dough onto the baking sheet. Slightly press down with the palm of your hand.

  7. Optional: Stick a chocolate chunk in the middle.

  8. Bake for 15 minutes.

  9. Let cool for 5 minutes before digging in.
