Healthier Gluten-Free Pumpkin Blondies

Ingredients

  • 2 1/2 cups homemade oat flour
  • 1/2 tablespoon ground cinnamon
  • 1/2 tablespoon pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup maple syrup
  • 1/2 cup coconut sugar
  • 1 cup melted coconut oil
  • 1 large egg
  • 1 1/2 to 2 cups pumpkin purée
  • 2 tablespoons vanilla
  • 1 1/2 cups semi-sweet chocolate chips

Preparation

  1. Preheat oven to 350 degrees Fahrenheit

  2. Use either a 9x13 pan or a 12 muffin pan and an 8x8 pan, and line with parchment paper or spray with oil

  3. Use a food processor to grind oats to make oat flour

  4. In a bowl mix dry ingredients

  5. Beat together melted oil, add sugar and maple syrup, then add eggs, pumpkin, and vanilla until combined

  6. Mix in flour mixture and chocolate chips

  7. Pour into prepared dish

  8. Bake muffins for 30-35 minutes and 8x8 pan for 45-50 minutes or 9x13 pan for 35-45 minutes

  9. Top with more chocolate chips if desired
