Gluten-Free Chocolate Chip Marshmallow Cookies

Ingredients

  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups measure for measure gluten-free flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Preparation

  1. Preheat oven to 350 and line baking sheet with parchment

  2. Beat together butter and sugars until smooth

  3. Add in egg and vanilla and mix

  4. Slowly add in flour, baking powder, salt, and baking soda

  5. Gently fold in chocolate and marshmallows

  6. Form into balls and flatten, press more chocolate and marshmallows if desired

  7. Bake for 9-15 minutes or until edges are golden brown
