Gluten Free Cookie Cake
Ingredients
- 3/4 cup softened butter
- 1 cup packed brown sugar
- 1 egg and 1 egg yolk
- 2 teaspoons vanilla
- 2 cups gluten-free flour
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups chocolate chips
Preparation
Preheat oven to 350 degrees Fahrenheit.
Line and spray a 9-inch pie pan or cake pan.
Beat butter for 1 minute.
Beat in sugar until combined.
Add egg and vanilla and beat.
In a separate bowl, mix flour, baking soda, cornstarch, and salt.
Add the dry mixture to the wet mixture and mix in chocolate chips.
Press the dough into the pan and bake for 20-25 minutes.
