Gluten-Free Chocolate Chip Marshmallow Cookies
Ingredients
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups gluten-free flour (or regular flour)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows, plus extra for topping
Preparation
Preheat oven to 350°F and line a baking sheet with parchment paper.
Beat together butter and sugars until smooth.
Add in egg and vanilla and mix.
Slowly add in flour, baking powder, salt, and baking soda.
Gently fold in chocolate and marshmallows.
Form the dough into balls and flatten them, pressing in more chocolate and marshmallows if desired.
Bake for 9-11 minutes or until edges are golden brown.
