Gluten-Free Whiskey Browned Butter Blondies

Ingredients

  • 3/4 cup plus 1 tbsp gluten-free flour
  • 1/2 tsp baking powder
  • 3/4 cup brown sugar
  • 6 tbsp butter
  • 1 egg
  • 1 tsp vanilla
  • 2-4 tbsp whiskey or bourbon
  • 1/2 cup semi-sweet chocolate chips

Preparation

  1. Preheat oven to 350°F and line an 8x8 baking pan with parchment paper so it covers the sides.

  2. Melt the butter in a small pan and cook until it has a nutty smell and turns amber with brown specks, then allow it to cool.

  3. Whisk the flour, leaving out the extra tablespoon, and baking powder together.

  4. In another bowl, combine the browned butter and brown sugar until blended.

  5. Add the egg, whiskey or bourbon, and vanilla, and mix well.

  6. Fold in the dry ingredients.

  7. Mix the remaining flour with the chocolate chips and then mix it into the batter.

  8. Bake for 22-24 minutes; do not over-bake. The blondies should be golden brown and chewy. Use a cake tester and if it comes out clean, they are done.
