Simple Pumpkin Mug Cake in Minutes
Ingredients
- 1 egg
- 1 tablespoon pumpkin purée
- 1 tablespoon oil
- 1 tablespoon maple syrup
- Splash of vanilla
- 2 tablespoons coconut flour
- 1/4 teaspoon baking soda
- 1/2 teaspoon pumpkin pie spice
- Pinch of salt
- Mini chocolate chips (optional)
Preparation
Whisk one egg with 1 tablespoon pumpkin purée, 1 tablespoon oil, 1 tablespoon maple syrup, and a splash of vanilla.
Mix in 2 tablespoons coconut flour, 1/4 teaspoon baking soda, 1/2 teaspoon pumpkin pie spice, and a pinch of salt.
Stir in mini chocolate chips as desired.
Microwave for 60-80 seconds until the top looks evenly cooked.
Top with more chocolate chips and nut butter if desired.
