Quick Chocolate Peanut Butter Mug Cake

Ingredients

  • 1 egg
  • 1 tablespoon avocado oil
  • 1 tablespoon peanut butter
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons coconut flour
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 tablespoons almond milk
  • mini chocolate chips

Preparation

  1. In a microwaveable bowl, whisk together one egg, 1 tablespoon oil, 1 tablespoon peanut butter, 1 tablespoon maple syrup, and 1/4 teaspoon vanilla.

  2. Stir in 2 tablespoons coconut flour, 1 tablespoon cocoa powder, 1/4 teaspoon baking soda, and 1/8 teaspoon salt.

  3. Add 2 tablespoons almond milk and mini chocolate chips.

  4. Microwave for 60-80 seconds or until set.

  5. Top with peanut butter, peanuts, or whatever you like.

Substitutions

  1. Use 1/3 cup almond flour instead of coconut flour.

  2. Any oil can be used instead of avocado oil.

  3. Honey can be used instead of maple syrup.
