Healthy Chocolate Peanut Butter Muffins
Ingredients
- 2 bananas (ripe)
- 3/4 cup almond milk
- 2 eggs
- 1/3 cup maple syrup
- 1/2 cup peanut butter
- 1 tsp baking soda
- 3/4 cup cacao powder
- 1/2 cup dark chocolate chips
- 1/2 tsp salt
- 2 tsp vanilla extract
- 2 cups rolled oats
Preparation
Preheat oven to 170°C. Grease muffin trays.
Throw all the wet ingredients in a blender, then all the dry ingredients (exclude the dark chocolate chips). Blend for 30 seconds or until smooth batter forms.
Add chocolate chips to blender batter but just fold in by hand.
Pour batter into the muffin tin so that each is 3/4 full.
Sprinkle a few more chocolate chips on top then place them in oven for 18-20 minutes.
Allow to cool for 10-15 minutes then enjoy! Place leftovers in airtight container for up to 4 days.
