Vegan Paleo Chocolate Chunk Muffins

Ingredients

  • 3/4 cup applesauce
  • 3/4 cup almond butter
  • 1/2 cup coconut sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/4 cup coconut flour
  • 1/4 cup tapioca flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup @hukitchen Gems

Preparation

  1. Preheat oven to 350ºF

  2. Whisk together the applesauce, almond butter, coconut sugar, acv, and vanilla

  3. Stir in the flours, baking soda, and salt

  4. Scoop into a greased or lined muffin pan filling 3/4 of the way (makes 6ish)

  5. Top each with a handful of Gems and press in lightly

  6. Bake for 25-30 minutes at 350ºF

  7. Cool for at least 15 minutes before removing from the pan

  8. Enjoy warm, or I love them chilled
