Gluten Free Vegan Chocolate Cake

Ingredients

Cake

  • 2 cups oat flour
  • 1 cup cacao powder
  • 3/4 cup tapioca or corn starch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup almond milk
  • 1/2 cup almond butter
  • 3/4 cup coconut sugar
  • 1 1/2 cup applesauce
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tsp coffee extract (optional)

Frosting

  • 1 1/2 cup raw cashews soaked overnight
  • 1/4 cup maple syrup
  • 1/4 cup cacao powder
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Preparation

  1. Preheat the oven to 350F.

  2. Whisk together oat flour, cocoa powder, tapioca starch, baking powder, baking soda, and salt.

  3. Blend almond butter, coconut sugar, applesauce, non-dairy milk, apple cider vinegar, vanilla extract, and coffee extract.

  4. Add the wet ingredients to the dry and stir to combine.

  5. Pour into a 9-inch cake pan.

  6. Bake for 30-35 minutes at 350F or until a toothpick inserted into the center comes out clean.

  7. Cool completely before frosting.

  8. Blend frosting ingredients, adding milk slowly until it is smooth and thick.

  9. Spread onto cooled cake, slice, and eat!
