Midweek Cake Break

Ingredients

  • 2 cups oat flour
  • 1 cup cocoa powder
  • 3/4 cup tapioca starch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup almond milk
  • 1/2 cup almond butter
  • 3/4 cup coconut sugar
  • 1 1/2 cup applesauce
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 350F

  2. Whisk the oat flour, cocoa powder, tapioca starch, baking powder, baking soda, and salt until lump free

  3. Blend the almond butter, coconut sugar, applesauce, non-dairy milk, apple cider vinegar, and vanilla extract

  4. Add the wet ingredients to the dry and stir to combine

  5. Don’t over mix

  6. Pour into a greased 9-inch cake pan and bake for 30-35 minutes at 350F or until a toothpick inserted into the center comes out clean

  7. Remove from the oven and cool completely before frosting
