Vegan Pomegranate Brownies

Ingredients

  • 2 tbsp flaxseed meal
  • 1 cup almond milk
  • 1/2 cup coconut oil, melted
  • 1 cup coconut sugar
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1/3 cups almond meal
  • 1 tsp baking powder
  • pinch of salt
  • 1/2 cup pomegranate seeds
  • 1/4 cup dairy free chocolate chips

Preparation

  1. Preheat the oven to 175c (350f)
grease or line a square baking pan with parchment paper

  2. Mix the flaxseed meal with the almond milk and let sit for 10 minutes to thicken

  3. Then add the melted coconut oil and coconut sugar and mix well

  4. Sift in the flour, cocoa powder, almond flour, baking powder and pinch of salt

  5. Stir until just combined

  6. Pour the batter in the prepared baking pan, top with pomegranate seeds and chocolate chips

  7. Bake for 20-25 minutes, it should still be a little jiggly in the middle

  8. Let the brownies cool completely in the pan before cutting and serving

  9. Enjoy!!
