No Bake Snickerdoodle Cookies Paleo Style

Ingredients

  • 1 cup nut butter (I used cashew butter)
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 1 tsp cinnamon
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon (for rolling mixture)

Preparation

  1. Mix all ingredients together

  2. Form the mixture into balls

  3. Line a plate with parchment paper and place the balls on it without flattening

  4. Place in the fridge for 20 minutes

  5. Remove from fridge and roll the balls in a mixture of 2 tbsp coconut sugar and 1 tsp cinnamon

  6. Flatten the balls into cookies

  7. Place back in the freezer for 1 hour

  8. Remove from freezer and enjoy; store in the fridge
