Gluten-Free Vegan Chocolate Strawberry Cookies
Ingredients
- 1 flax egg (1 tablespoon ground flaxseed and 2.5 tablespoons water)
- 2 tablespoons coconut oil
- 1/2 tablespoon vanilla extract
- 1/3 cup coconut sugar
- 2 tablespoons almond butter
- 1 1/4 cups almond flour
- 1/2 teaspoon baking soda
- pinch of salt
- 1/3 cup freeze-dried strawberries
- 1/3 cup chopped dark chocolate
Preparation
Prepare the flax egg by mixing 1 tablespoon ground flaxseed with 2.5 tablespoons water and freezing for 10 minutes.
Preheat oven to 350°F.
Mix the flax egg, coconut oil, vanilla extract, coconut sugar, and almond butter in one bowl.
In another bowl, mix the almond flour, salt, and baking soda.
Slowly incorporate the dry mixture into the wet mixture.
Fold in the freeze-dried strawberries and chopped dark chocolate.
Scoop out 9 cookies evenly apart on a lined baking sheet.
Bake for 10 minutes.
After removing from oven, feel free to sprinkle on more dried strawberries.
