Super Fluffy Vegan Chocolate Muffins

Ingredients

  • 3/4 cup whole grain flour
  • 3/4 cup white flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup natural granulated sugar
  • 1/4 cup sunflower oil
  • 1 Tbsp. apple cider vinegar
  • 1 tsp. vanilla extract
  • vegan chocolate chips

Preparation

  1. Combine all dry ingredients through a sifter in a mixing bowl.

  2. Pour in 1 cup warm water with all remaining ingredients. Stir together with a wooden spoon until the dry ingredients are moistened, then use a whisk to stir vigorously just until the batter is smooth.

  3. Spread the vegan chocolate chips into the batter and give it a few gentle stirs.

  4. Pour the batter into a muffin tin lined with baking paper and bake at 300 degrees (150 C) for 40 minutes.
