These Vegan Chocolate Muffins Are Delightful

Ingredients

  • * 3/4 cup whole grain flour
  • * 3/4 cup white flour
  • * 1/4 cup unsweetened cocoa powder
  • * 1 tsp. baking powder
  • * 1 tsp. baking soda
  • * 1/2 tsp. salt
  • * 1 cup natural granulated sugar
  • * 1/4 cup sunflower oil
  • * 1 Tbsp. apple cider vinegar
  • * 1 tsp. vanilla extract
  • * vegan chocolate chips/chunks (about 1/3 cup)

Preparation

  1. Combine all dry ingredients through a sifter in a mixing bowl

  2. Pour in 1 cup warm water with all remaining ingredients. Stir together with a wooden spoon until the dry ingredients are moistened, then use a whisk to stir vigorously just until the batter is smooth. Spread the vegan chocolate chips (or a small pieces of dark chocolate) into the batter and give it a few gentle stirs

  3. Pour the batter into a muffin tin lined with baking paper and bake on 300F (150C) for 40 minutes. I made about 15 muffins with that much batter
