Vegan Guilt-Free Chocolate Muffin Treats
Ingredients
- 3/4 cup whole grain flour
- 3/4 cup white flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup natural granulated sugar
- 1/4 cup sunflower oil
- 1 Tbsp. apple cider vinegar
- 1 tsp. vanilla extract
- vegan chocolate chips
Preparation
Combine all dry ingredients through a sifter in a mixing bowl.
Pour in 1 cup warm water with all remaining ingredients.
Stir together with a wooden spoon until the dry ingredients are moistened, then use a whisk to stir vigorously just until the batter is smooth.
Spread the vegan chocolate chips into the batter and give it a few gentle stirs.
Pour the batter into a muffin tin lined with baking paper and bake at 300 degrees (150 C) for 40 minutes.
This recipe makes about 15 muffins.
