Gooey Vegan Chocolate Brownies

Ingredients

  • 8 ounces vegan chocolate
  • Flax eggs (2 tbsp flax meal & 6 tbsp water)
  • Organic sugar (1 cup & 2 tbsp)
  • 1/2 cup vegan butter, melted
  • 2 tsp vanilla extract
  • 3/4 cup & 2 tbsp flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp salt

Preparation

  1. Prepare flax eggs by mixing 2 tablespoons flax meal with 6 tablespoons water; let sit for 5-10 minutes to gel

  2. Melt the vegan chocolate with the melted vegan butter

  3. In a large bowl, combine the sugar and vanilla extract

  4. Add the flax eggs to the sugar mixture and stir well

  5. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt

  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined

  7. Pour the batter into a greased baking pan

  8. Bake at 350°F (180°C) for 30-35 minutes.
