Beetroot Hummus Vegetable Pizza
Ingredients
- 1 pre-made pizza base (or homemade pizza base)
- 2 tablespoons pizza sauce (I used @ardmona_australia)
Sautéed vegetables
- 1 cup button mushrooms, sliced
- 1/2 onion, sliced
- 1 cup kale, chopped
- 1 teaspoon olive oil
- 2 teaspoons soy sauce
- Optional: other seasonings of choice e.g. garlic, thyme, fennel etc
Toppings
- 1-2 chargrilled peppers, sliced
- Handful of roasted pumpkin
Hummus sauce
- 3 tablespoons of Beetroot hummus
- 1 tablespoon non-dairy milk
Preparation
Preheat the oven to 250 degrees Celsius or 500 degrees Fahrenheit. Prepare a pizza tray.
Heat up the oil in a fry pan on medium heat, sauté the onion for 2 minutes, then add in the mushrooms, kale, soy sauce and optional other seasonings. Sauté for another 5 minutes until the mushrooms are soft and juicy.
Smear the pizza sauce over the base, top with the freshly cooked vegetables, roasted pumpkin and grilled peppers.
Bake the pizza for 10 minutes until the crust is golden.
In the meantime, make the beetroot hummus sauce by thinning it out with non-dairy milk.
Remove the pizza from the oven and drizzle the hummus sauce over the top. Serve warm.
