Polenta Pizza

Ingredients

  • for polenta:⁠
  • 4 cups of water⁠
  • 1/2 tsp salt⁠
  • 1/2 tsp pepper⁠
  • 1/2 tsp dry basil⁠
  • 1/2 tsp oregano⁠
  • 2 tbsp olive oil⁠
  • 1 cup of polenta (corn grits)⁠
  • for tomato sauce:⁠
  • 2 tbsp olive oil⁠
  • 2 cloves of garlic⁠
  • 300g tomato pulp⁠
  • 1/2 tsp salt⁠
  • 1/2 tsp pepper⁠
  • 1/2 tsp dry basil⁠
  • 1/3 tsp chili pepper⁠
  • 1 tsp sugar⁠
  • toppings:⁠
  • 5-6 pieces cherry tomatoes⁠
  • 1 garlic clove⁠
  • 100g vegan cheese⁠
  • handful of fresh basil and rosemary⁠
  • drizzle of olive oil⁠

Preparation

  1. Boil 4 cups of water, add seasonings and olive oil

  2. Lower the fire and slowly add in 1 cup of polenta stirring the whole time until it thickens⁠

  3. Make a round shape (i’ve use cake pan frame), oil baking paper, pour polenta on it and let it cool⁠

  4. Make tomato sauce by frying garlic on olive oil for couple of minutes, add tomato pulp, seasonings, cook for 5minutes and shortly blend⁠

  5. Pour the sauce on polenta, add toppings and put in oven at 250c (480f) for 25minutes
